Earthquake Cake

1 cup nuts
1 box German Chocolate Cake mix (and all ingredients needed to make cake from box)
1 cup coconut

Icing
1 lb. confectioners sugar (about 2 cups)
(1) 8-oz. package Cream Cheese (softened)
1 stick margaine (or butter) softened
2 teaspoon vanilla

Preheat ovento 350 degrees. Grease 9x9 inch pan and spread nuts and coconut on the bottom of
the pan.  Mix cake according to box directions and pour over nuts and coconut and bake for 45
minutes.

For the icing, cream together confectioners sugar, cream cheese, margarine (butter), and vanilla
until smooth. Spread over cooled cake.

Orange Blossoms

1 box lemon cake mix
Juice of 2 oranges
Rind of 1 orange
Juice of 2 lemons
Rind of 1 lemon
1 pound of confectioners' sugar

Glaze  
Remove only the seeds from freshly squeezed fruit (the pulp makes it tangy).  Mix with sifted
confectioners' sugar.  Keep mixture stirred.

Prepare cake mix according to box instructions.  Bake in petit four size muffin pans. Use 1 teaspoon
mix for each cake.  As cakes come from oven, dip in glaze while hot, coating well.  Drain on waxed
paper.  Makes 10 to 12 dozen cakes.
